Swedish Holiday Ham Recipes

Here are Ulla Hanson’s traditional Swedish Holiday Ham recipes.

Boiled Ham:
10-12 Lb. Cured ham
Place fat side up, cover with cold water
Bring to boiling, skim surface. Add seasonings:
 -  2 bay leaves
 -  ½ tsp. peppercorns
 -  ½ tsp. allspice
 -  1 chopped onion
 -  1 chopped carrot
 -  salt to taste
Boil gently for 4 hours, turning after 2 hours. When ham is tender, remove from liquid, skin and wipe loose fat from ham. Return to stock and let stand in a cool place over night to ensure a juicy ham. Next day:
Combine 1 beaten egg white (a whole egg is OK),
1 Tbsp. dry mustard (or prepared mustard is OK),
1 Tbsp. sugar
Brush mixture on ham, sprinkle with fine breadcrumbs. Bake at 325 degrees until nicely brown, approximately 50 minutes.

Baked Ham:
Place ham fat side up, in shallow baking pan. Insert meat thermometer, careful not to touch bone. Bake at 250-260 degrees until the internal ham temperature reaches 170 degrees. This takes 4-6 hours, depending on the size of the ham. Remove ham from oven, skin off rind, cool slightly before proceeding with the egg glazing. Follow the recipe noted above for Boiled Ham glazing and bake as shown. This ham is served cold.

 

Swedish Gul Ärtsoppa Recipe

Gul Ärtsoppa / Yellow Pea Soup

  • 1 lb. Swedish Yellow Peas
  • 2 – 2 ½ quarts water
  • ½ -1 lb. smoked or salted pork, bacon or ham
  • 1 onion, chopped
  • ½ tsp. marjoram
  • ½ tsp. ginger
  • 1 tsp. salt

Rinse peas several times and let soak 4-12 hours in a large saucepan/stock pot. Bring to a boil; skim surface. Add pork, onions and seasonings. Cover and simmer until peas are tender – about 1 – 1 ½ hours. Adjust seasonings. Serve with mustard, if desired. Serves 4-6
